A chicken Caesar salad might belong in the hall of fame of all-time great salads. It’s a classic, no doubt about it. But when you’re looking for something a little more filling, go for this Chicken Caesar Sandwich. It has everything you love about the salad, plus melty mozzarella, stacked between two beautiful pieces of toasted ciabatta bread.

The Ceaser Dressing:

Making a Caeser dressing is not only really easy but so much better than anything you can buy of the shelves. It comes together in just minutes, whether you use a blender or simply whisk it together in a bowl.

Caesar Dressing

Some key notes:

  1. Anchovies: This is the main flavor bomb in the dressing. Trust me, you won’t taste an overpowering fishy flavor, but they add so much savory depth and umami. They are a must for a great Caesar dressing.
  2. Freshly grated Parmesan: Please grate your Parmesan. As you all know, I’m not a fan of the pre shredded stuff. Freshly grated Parmesan not only gives you the best flavor and texture, but it also helps you avoid the additives found in many pre shredded cheeses.
  3. Oil: The hottest topic is which oil to use. I prefer a neutral oil because this dressing already has plenty of bold flavor from the anchovies, garlic, Dijon, Worcestershire sauce, and Parmesan. Olive oil can sometimes make it taste bitter, so I recommend using all neutral oil, though a half-and-half mix also works.
  4. Blender: Not a must but helpful. If you don't have one grab a bowl and a whisk and get to mixing.

The Chicken

For this recipe, I use crispy breaded chicken to give the sandwich some extra crunch and added texture. You’re more than welcome to use grilled chicken instead if you prefer something lighter and bit healthier. Both options work beautifully with the creamy Caesar dressing, mozzarella, and crisp romaine.

Building the Sandwich:

Ain't no other option but ciabatta. It’s the perfect bread for this sandwich. It’s soft on the inside but sturdy enough to hold the Caesar dressing, crispy chicken, and dressed lettuce without falling apart. Give it a good toast with some butter, and honestly, you’re already halfway to heaven.
