Moru Curry | Pulissery
If plain rice is starting to feel a little boring, Moru Curry, also known as Pulissery, is such an easy way to bring it to life. It’s a tangy yogurt-based curry flavored with turmeric, spices, and aromatics, and it comes together in just about 15 minutes. It’s simple, comforting, and light, but still packed with so much flavor.
What is Moru Curry?
Moru Curry, also known as Pulissery, is a traditional Kerala style curry made with yogurt and a simple blend of spices and aromatics. I'm not even kidding when I say this, I could drink it straight up. It’s cooked with everyday ingredients like onions, ginger, garlic, and chilies, then finished with turmeric, mustard seeds, and fenugreek for even more flavor. It’s one of those simple dishes that can completely transform a bowl of rice.
How is it made?
The process is super simple and comes together in about 10 minutes. You start by blooming your seeds, then add in your vegetables and spices and cook until everything is nice and fragrant. From there, add in your yogurt mixture over very low heat, making sure it doesn’t curdle or split. Finish with some curry leaves while mixing, and your Pulissery is ready! Really, it's that simple.

My Moru Curry Has Little White Bits in It. What Happened?
This happens to the best of us, even me.
This is called curdling, which happens when your yogurt starts to split. This usually happens when the yogurt gets too hot, causing it to separate and form those little white curds.

To reduce the chance of this happening, before adding in your yogurt mixture, turn the flame down to the lowest possible setting and wait about 1 minute. Then add in the yogurt mixture and mix continuously for 1-2 minutes. After that, completely remove the pot from the stove and keep mixing off the heat until everything is smooth and a beautiful yellow.
Using very little heat when cooking the yogurt will help keep your Pulissery smooth, creamy, and free of curdled or clumpy bits.
