For this recipe, we’re going with a spice forward yogurt marinade that helps tenderize the chicken while packing it with flavor. We season the marinade more heavily than the sauce, which is why the sauce itself uses relatively few spices. A lot of the flavor in this dish comes directly from the chicken.
Marinating time is up to you, but around 4 hours is ideal. If you’re short on time, even 30 minutes works perfectly while you prep the ingredients for the sauce. Anything is always better than nothing here.
The butter chicken marinade includes turmeric, Kashmiri chili powder, garam masala, black pepper, and salt. The biggest flavor booster, though, is the garlic, ginger, and green pepper paste. Crushing everything with a mortar and pestle releases the natural juices and helps those flavors work their way into the chicken.
Ghee adds another layer of richness, but butter is a completely acceptable substitute. Finally, yogurt acts as the base of the marinade, helping tenderize the chicken and bind all the ingredients together.
Secondly: Cooking the Chicken
Once the chicken is done marinating, we're going to use the oven to cook it. Some recipes call for cooking the chicken directly in the same pan as the sauce, which is completely acceptable, but baking it separately has a few advantages. It allows you to work on the sauce while the chicken cooks, and the oven helps create a deeper roasted flavor and a little bit of char.

One thing I like to do is toss the chicken around in the baking tray halfway through the cooking time. This helps the pieces cook more evenly and gives them another chance to get coated in all that flavorful marinade.

Two Things That Make This Sauce Special
Blooming the spices: Instead of adding the spices directly to the tomato puree, we briefly cook them in butter first. This wakes up the spices, releases their natural oils, and allows their flavor to spread throughout the entire sauce. It only takes a minute or two, but it makes a noticeable difference.
Using cashew puree: Cashew puree gives the sauce extra body, richness, and a naturally creamy texture without relying entirely on heavy cream. It also adds a subtle nuttiness and helps create that smooth, luxurious consistency butter chicken is known for.

A Few Tips for Making the Sauce
- Bloom your spices: Cooking the spices in butter helps release their oils and brings out their full flavor. It's quick but super important.
- Take your time: Don’t rush the process. Keep the heat low while blooming the spices and cooking the tomato paste, then increase it slightly once you add the onions.
- Simmer down the tomatoes: Tomato puree contains a lot of liquid, so let it reduce properly before adding the cashew puree and cream. This creates a richer, more concentrated sauce.
- Use the aromatics: Cilantro isn’t just a garnish here. It adds freshness and flavor to the sauce. The same goes for kasuri methi, aka dried fenugreek leaves, which gives butter chicken its signature aroma.
- Balance with honey: The honey isn’t meant to make the sauce sweet. It helps balance the acidity of the tomatoes, the richness of the cream, and the heat from the spices.
